New Zealand is under Lockdown for at least four weeks. This blog intends to avoid the bad news about rising numbers of victims. It focuses instead on food, and the challenges of cooking fresh meals every day – with the ingredients from my larder. A much nicer message 🙂
Day 1 – Thursday: Chicken Schnitzel Sandwiches
I kept things simple tonight, with chicken schnitzel sandwiches. I made the schnitzel myself a few weeks ago in a big batch, and froze half of it. Anyway. I baked the chicken pieces for around 15 minutes in a hot oven (200 deg. C), before adding slices of swiss cheese for another couple of minutes until melty. The sandwiches were made with thick, white bread, and layered with: cranberry sauce at the bottom (absolutely essential!), thin-sliced tomato, lettuce and chicken, with hot chilli sauce & mayo on the top slice. Yummy! Also good with crispy bacon.
My chicken schnitzel
Chicken fillets, sliced in half to make two thin slices, then hammered flat (between layers of clingfilm) with a wooden rolling pin. Dipped in flour, then beaten egg, and then panko breadcrumbs. It’s a slow process, which is why I usually make double, and freeze half, with the schnitzel pieces separated by layers of baking paper.
