Leftover roast chicken + curry paste = delicious quick dinner
It was another busy day at my desk, an afternoon filled with meetings, and the increasing need for a quick to prep and eat meal. The leftovers from Monday’s roast chicken were perfect for a speedy curry, along with a generous portion of mushrooms, and the last scrapings of the Korma Curry Paste.
Some plain basmati rice, and a bowl of poppadums completed the picture. From start to eating in around twenty minutes. Perfect for a weeknight meal 😊
New Zealand is under Lockdown for at least four weeks. This blog intends to avoid the bad news about rising numbers of victims. It focuses instead on food, and the challenges of cooking fresh meals every day – with the ingredients from my larder. A much nicer message 😊
