Lockdown Larder – Day 38 (Saturday)

Fusion Kebabs!

 

We have yoghurt! And chicken thighs! And salad! And fresh garlic!

The groceries arrived today, with everything I ordered. I have filled the gaps in the larder and the freezer, and it was a delight to pick and choose what arrived, while we decided what we would have for dinner.

The Chicken Doner Kebabs (from early in Lockdown) were delicious, but there wasn’t enough substance in the finished kebabs, and so we’re trying them again – with an accompaniment of lamb, in a souvlaki (Greek) marinade. I also made tabbouleh.

They were SO good. The lamb was a little overcooked, but very tasty from the marinade, and we cooked the chicken to perfection. The wraps were bursting at the seams with layers of hummus, tabbouleh, shredded lettuce, grated carrot, yoghurt drizzle, chicken, lamb, and finally a splash of hot lime-chilli sauce. Definite hit with the family 😊

 

 

New Zealand is under Lockdown for at least four weeks. This blog intends to avoid the bad news about rising numbers of victims. It focuses instead on food, and the challenges of cooking fresh meals every day – with the ingredients from my larder. A much nicer message 😊
