Lockdown Larder – Day 36

Spinach and feta quiche & salad – a big veggie dinner

 

After the intensely rich casserole last night, I wanted something light and preferably meatless for dinner. Since I had a huge bag of spinach in the fridge – and a new block of feta cheese – I figured that would be the base of whatever we had. Spinach & feta quiche fit the bill nicely.

I made some minor changes. My pie dish was slightly larger, and so I used 4 eggs, 4 handfuls of spinach, and added some thinly sliced mushrooms.

All it needed on the side was a quick salad. This was made from shredded iceberg lettuce, half a grated carrot, a few florets of broccoli (grated) and a bunch of spring onions. I feel healthier already.

The herby shortcrust pastry was delicious! The whole quiche came out looking gorgeous, and tasted great. Son even went back for seconds 😊

New Zealand is under Lockdown for at least four weeks. This blog intends to avoid the bad news about rising numbers of victims. It focuses instead on food, and the challenges of cooking fresh meals every day – with the ingredients from my larder. A much nicer message 😊
