Lockdown Larder – Day 34

Simple Sausage Casserole – with lots of veggies!

 

There were 4 sausages to be used, and a simple casserole called. Like the recipe I used a couple of weeks ago, I chopped the bangers into chunks and lightly fried them until golden, then added seasoning (salt, pepper, dried chilli flakes & mixed dried herbs), and a selection of veggies. This time it was a chopped capsicum, a thinly sliced leek, a large diced carrot, a good handful of finely chopped potatoes and then a tin of chopped tomatoes.

Five minutes before serving I added a large handful of finely shredded cabbage. It was hearty, and plentiful, and I thought there’d be leftovers, but we ate it all.

New Zealand is under Lockdown for at least four weeks. This blog intends to avoid the bad news about rising numbers of victims. It focuses instead on food, and the challenges of cooking fresh meals every day – with the ingredients from my larder. A much nicer message 😊
